Gluten Free Granola Bites


I am on a mission. A mission to make sure my family gets the best nutritionally and to help keep them healthy.  But jeez! It can be so hard sometimes!!  Luckily my oldest son, Logan, who is 9 years old, eats his veggies. The kid loves my brussel sprouts...will have to share that recipe another time. However, after having my 2nd son, Christian, I realized that kids are not all created equal.

This kid could live off of toast and cookies if I let him.  He used to eat broccoli and cauliflower but now will not touch a vegetable.  Luckily, we can get him to drink green smoothies. But other than that, what is a "health nut" mom to do???

Well, I came up with a few great recipes this past weekend and some of them involve sneaking in veggies. Normally, I'm not a fan of this. But like I said, Christian opened my eyes to the world of picky eaters. So, I will do what I have to do!

These granola balls were absolutely delicious. I found myself eating one too many and found my husband doing the same.   Another bonus is that they are super easy to make.  Check out the recipe below and let me know what you think!

Recipe Yields: 18 – 20 bites
Ingredients
1/2 cup creamy peanut butter (or other nut butter)
1 cup dry gluten free rolled oats 
2/3 cup dried raisins or other dried fruit, chopped
1/3 cup honey
1/2 cup Enjoy Life chocolate chips
1 scoop Greens Boost powder
1/3 cup ground almonds or other nut                                                                                                                        

Instructions
1. Put all ingredients into a large bowl.
2. Mix well until all ingredients are well incorporated.
3. Cover with plastic wrap and chill for one hour in refrigerator.
4. Using a table spoon, take tablespoon size amount and roll into a tight ball. Place balls on a waxed paper lined cookie sheet.
5. Place cookie sheet into freezer and freeze for 3 hours. You can then keep these in a plastic ziplock bag and keep in the freezer for up to 3 months...though they never last that long :)
